Aji, which means “chili pepper” in Spanish and “flavour” in Japanese, is overseen by Peruvian-Japanese Celebrity Chef Mitsuharu Tsumura of the restaurant “Maido” in Lima (ranked #7 in the World’s 50 Best Restaurants). Tsumura take for the first time to Macau the Nikkei cuisine, a concept missing the delicacy and refinement of Japanese techniques and the exotic flavours of Peruvian.

This one-of-a-kind concept will becoming a destination for sophisticated gourmets, and reflects a unique fusion of cultures.

The innovative food is matched by dramatic design. An impressive white stones oblique stairs introduces the guest to the dining room, with its organic shapes and textures, overlooks MGM COTAI’s incredible Spectacle, and the ceviche and sushi counter gets you up close with master chefs preparing the freshest seafood, in an open kitchen setup.

The Aji’s pisco and sake bar with is predominant red tones, as the chili pepper, mixes modern design with traditional set up of South American club and allow the guest to enjoy some of the best Peruvian inspired cocktails outside of Lima in an ambient whit light that contribute to the give the place a sophisticate atmosphere.
